I found a recipe and have been trouble getting Lemon Grass in stalks, the recipe calls for 1 stalk. If I use ground lemon grass, how many teaspoons, table spoons would be the same as one stalk?

Usually you infuse your cooking liquid with large pieces of the lemon grass and ground herbs are more potent tasting than whole leaves.

In this case, you should err on the side of caution and start with 1 teaspoon (maybe even 1/2 teaspoon) for each stalk of lemon grass.
